GOTE

This is one of my traditional meals, trust me you won't regret trying this out because it is highly nutritious especially for people with sugar problem and obesity, but can be enjoyed by everyone.
Ingredient
spinach
moringa leaf
spring onions
maggi
salt
palm oil (optional)
fonio (acha) (3/4 cup)
garden egg
meat or fish (optional)
pepper
locust beans
tomatoes (optional)
groundnut (optional)
yakuwa (don't know the name in English)
cabbage (optional)
Procedure
  • boil the meat with salt, maggi and pepper to taste
  • add 100cl of water into the meat, pound or slice the garden egg, wash the yakuwa leaf and add into the water
  • add one cooking spoon of palm oil, locust beans and moringa leaf into the water, allow it to boil
  • wash the fonio to remove all impurities, add it to the boiling water, stir until it becomes a bit thick
  • add maggi and salt to it
  • wash the spinach, spring onions and cabbage, cut them  into smaller pieces and add it into the pot of boiling fonio
  • allow it to cook for 2 minutes.

MEAT PIE

Ingredients
flour (4 cups)
margarine (1/2 pack)
a pinch of salt
a pinch of sugar
baking powder (3 spoonful)
eggs (3)
milk (1/2 tin)
meat(beef)
carrots
onions
Irish potato
maggi, salt and any other seasoning of your choice
Procedure on making the paste
  • mix your flour, baking powder, a pinch of salt and a pinch of sugar in a bowl
  • add margarine to it and mix it thoroughly
  • add eggs and milk to the mixture, mix very well until a soft paste is acquired
procedure on making the meat sauce
  • boil meat with maggi, salt and seasoning until it is very soft.
  • blend meat in a blender but in the absence if a blender it can be pounded
  • boil potato to be very soft and blend or mash it with a spoon
  • mix the meat, potato, shredded carrot, maggi and a little salt in a pot and boil together to get a good mixture.
flatten the paste and put the sauce inside, wrap it and bake for 10 minutes until a light brown coloration is obtained.

BRABISCO

Ingredients
acha (fonio) 4 cups
groundnut oil or palm oil (1/2 cooking spoon)
tomatoes
pepper or chilli
onions
fish (preferably smoked)
meat (any of your choice)
maggi ( 4 cubes)
salt (1/4 tablespoon)
scent leaf
green beans
carrot
Procedure
  • wash the fonio with warm water to remove any impurities in it
  • blend the tomatoes, onions and pepper together then fry it in the groundnut oil
  • add about 50cl of water, add salt, smoked fish, maggi and scent leaf, allow the water to boil
  • add the fonio into the boiling water, keep stirring until it becomes thick
  • reduce the heat to a very low temperature and allow it to cook for 20-30 minutes
  • add meat, green beans and carrot and allow it to cook for 3 minutes
THIS MEAL IS VERY GOOD FOR DIABETIC PATIENTS.

BANANA - GINGER CAKE

INGREDIENTS
1 banana
fresh ginger(based on your taste)
flour(2 cups)
margarine(1/2 pack)
sugar(1/4 cup)
baking powder(2 teaspoon)
eggs(4 big size)
milk(1/2 tin)
nutmeg(based on taste)
dried fruit(based on taste)
PROCEDURE
  • cream your sugar and margarine together until you obtain a smooth mixture
  • blend your banana and ginger together and add it to the mixture
  • break the eggs in a bowl and whisk it then add to the mixture and add the milk too, mix to make sure it is homogenous
  • seive the flour incase of any impurities, mix the flour and baking powder in a different bowl just to make sure they mix properly
  • add the flour and baking powder into the initial mixture, add the nutmeg and dried fruit too and mix until the whole mixture is homogenous.
  • grease your baking pan with margarine, put the mixture into the baking pan and bake it in an oven.

POTATO SAUCE AND SPAGHETTI

INGREDIENTS
Irish potato
Cabbage
Carrot
Chili
Maggi(3 cubes)
Salt(1/2 table spoon)
curry
Onions
Green pepper
Groundnut oil or magarine
PROCEDURE  
  • Fry your chili and oil and pour 75cl of water into it, allow the water to boil
  • Peel potato and dice into small sizes, wash and pour into boiling water
  • Add maggi, salt, curry and onions into it, then allow it to cook for 5-6 minutes
  • Add the cabbage, carrot and green pepper into the potato and allow it to cook for a minute.
SPAGHETTI
INGREDIENTS
Pasta (spaghetti 1 pack)
Tomatoes
Pepper
Onions
Crayfish, smoked fish, dried fish or meat
maggi(3 cubes)
salt (1/2 table spoon)
green beans
carrot
peas
green pepper
PROCEDURE
  • Put 100cl of water into a pot, add a little salt and allow it to boil.
  • add the pasta into the boiling water, allow it to cook for 4 minutes.
  • sieve the pasta to drain out remaining water.
  • blend or slice the onion, tomatoes and pepper together and fry them in oil.
  • add crayfish, maggi and salt, then allow it fry for a minute or two
  • pour the pasta into the tomato sauce and mix them together harmoniously.
  • add 25cl of hot water to the miture, allow it to cook for 3 minutes.
  • add  the carrot, peas, green beans and green pepper, allow it to cook for 2 minutes
Serve it together with your potato sauce and a glass of water. ENJOY

RECIPE FOR A SMOOTHIE



                                RECIPE FOR A SMOOTHIE
Hi friends today we are going to learn a different method for making a smoothie, let’s talk about the normal smoothie we all know;
            INGREDIENTS
Strawberry
Banana
Milk, dairy milk or yoghurt
Sugar or honey (based on convenience, taste or medical condition)
Ginger
NOTE: you can use any fruit based on how you want it to taste.
            PROCEDURE
1.     Wash your fruits thoroughly and put them in a blender, including your ginger.
2.     Add yoghurt, milk or dairy milk into the blender.
3.     Add sugar or honey into the blender
4.     Blend to obtain your smoothie.
If you don’t want to use milk, yoghurt or dairy milk, we can easily get a substitute which is avocado. It’s the same procedure but instead of adding the milk we put avocado, though it would not taste the same but it is still delicious and we use avocado because it also has a creamy taste and has lots of healthy fat which lowers the risk of heart disease.
